Caputo takes on an extremely high level of technical know how and sophistication when producing the best pizza flour. They understand what it takes in making the perfect pizza flour: they understand the way flour behaves and all the processes. Through their experience they have managed to allow the flour to remain the only element when making pizza dough that won't change and this is fundamentally the most important. Before they turn the grain into the flour, Caputo has a specialised lab where they grind each batch of grain and make dough and then test it for elasticity and extensibility, as well as how much water the flour can absorb.
